It's hot and humid. The last thing you want to do is turn on the oven. Sandwiches make a great meal when it's too darn hot. A bit of mozzarella, tomato and arugula on a whole wheat roll, and bam, you got a great sandwich. Next time I'm going to make tapenade to add a bit of zing. Oh, and Sun Chips on the side.

I'm a sucker for a cold pasta salad on a hot day or cold shrimp marinated in lime juice and cilantro.
